Traditional recipes

Hoppers (Sri Lanka)

Hoppers are similar to pancakes. To make them you need: Add the milk and water to the flour gradually and mix well until the mixture is thick. Add the eggs, sugar and salt. Beat well for 10 to 15 minutes (using hand energy!) to make a batter. Cover and leave to stand for 20 minutes.

Pour a heaped tablespoon of batter into the middle of a hot pan and swirl it round to cover the bottom. A teaspoon of oil might help to prevent it sticking. Cook until the middle is thick and the edges crisp.

The mixture should make about six hoppers.

Dhal (lentil) curry Wash and drain the dhal, removing stones. Heat the oil in a heavy pan and brown the onion, garlic, ginger and celery. Add the curry leaves, tomato, spices, dhal and salt. Add water and cook over a low heat until the dhal is soft. Add more water if it is thick. Add the chillis with the onion if you like your curry hot.

Serves four.
